*adapted from cooking light's shrimp vodka pasta
it was monday & in spite of starting things off to the "healthiest" start, i decided to kick off the week with a delicious bowl of pasta. there just something about curling up on the couch after a long monday with a nice bowl of noodles. i've made a great shrimp vodka pasta before but this was even easier and just as delicious...yum!
{shrimp vodka spaghetti}
ingredients {in order of use}
*serves 2-4
- 2 tablespoons olive oil, divided
- 1 pound shrimp, peeled & deveined
- 3/4 box whole-wheat spaghetti
- 3 cloves garlic, roughly chopped
- 1/3 cup vodka
- 1 1/3 cups marinara sauce
- 1/3 cup chopped basil
- 1/4 cup half-and-half
- salt & pepper, to taste
1. bring a pot of salted water to a boil & cook spaghetti.
2. while spaghetti cooks, add 1 tablespoon of olive oil to a large skillet. when hot, add shrimp & sauté for 5 minutes, or until cooked thru. remove shrimp from pan when cooked & set aside.
3. using same skillet, add remaining 1 tablespoon olive oil & garlic. sauté over medium heat for 2 minutes. slowly add vodka; cook for 1 minute & occasionally stir. add marinara, basil, cream, salt & pepper. bring to a simmer for 1-2 minutes. stir in pasta & shrimp. enjoy warm!
*additional toppings: basil, parmesan cheese & red pepper flakes!
