now that i've really got you geared up for a delicious meal, let's venture in to what was on our plates last night!
i found this recipe on pioneer woman's blog & thought it sounded amazing.
{pause...i have a major blog crush on the pioneer woman. i mean, she lives in the middle of no where, started a blog, now has a cookbook & a show on food network. talk about making lemonade out of lemons! she also homeschools...and anyone who could sanely do that deserves an honor. a medal. a bottle of jack daniels.}
i made a few tweaks to her version am giving it to you below. behold...delicious, healthy chicken in mustard cream sauce.
{chicken in mustard cream sauce}
ingredients {in order of use}
*serves 2
- 6-7 chicken tenderloins
- salt & pepper, to taste
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 1 cup white wine {or 1/2 cup white wine, 1/2 cup sherry}
- 1 tablespoon dijon mustard
- 1 tablespoon whole grain mustard
- 1/4 cup half-and-half
- 1/4 cup chicken broth
- 1/4 teaspoon cornstarch
1. spread chicken out on a plate & season with salt & pepper.
2. in a large skillet, add olive oil & bring to medium-high heat. cook chicken on both sides to a golden brown & cooked through. remove chicken, place on a plate & set aside.
3. bring skillet to low-medium heat & add in garlic, sautéing so it doesn't burn. add in wine & allow to cook for a few minutes, until it starts to reduce by half. add in mustards & stir, add in the cream & stir to mix evenly. add cornstarch & mix completely. reduce heat to low, add chicken back to skillet & allow to marinate for a few minutes. enjoy warm!
