
i've always been a bit skeptical of cooking fish at home...just seems like it could go wrong in so many ways. but after simplifying a similar recipe, i am hooked {no pun intended}.
i suggest keeping frozen tilapia in the freezer so you can throw this together in a cinch!
*costco, publix & sams have great frozen tilapia
{baked parmesan tilapia}
ingredients {in order of use}
*serves 2
- cooking spray
- 2 filets of tilapia
- salt & pepper, to taste
- 1/2 cup italian-style breadcrumbs
- 2 tablespoons low-calorie butter
- 1/4 teaspoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon garlic salt
- 1/3 cup parmesan cheese
1. spray a cooking sheet with cooking spray & pre-heat oven to 425 degrees.
2. if tilapia is frozen, thaw. place on baking sheet & season with salt & pepper. set aside.
3. in a small bowl, mix breadcrumbs, butter, olive oil, salt & garlic salt. heat in microwave for 5 seconds to melt butter. stir.
4. pat mixture over tilapia to create a "crust". sprinkle with parmesan cheese.
5. bake for 12-15 minutes & serve hot. YUM!
