
today, st.patty's day, was full of corned beef, cabbage & soda bread. aWHAT?! ew. i mean, i'm irish but i don't want to enjoy any of that. so i'm sharing with you, an easy version of the boxed version i know you ALL have had at some point!!!
oh & remember how i mentioned i was doing a little light, couponing?! okay so we've gone full blown discount madness around our house. {we, i : tomato, tomato}. i got 12 boxes of pasta for FREE at kroger today!! we eat a ton of pasta but we're about to be noshing on a TON of pasta. oh & if interested in how to obtain free pasta, just ask & you too can do the same!
{one pot wonder: beef stroganoff}
ingredients {in order of use}
- 1 {1 pound} top round steak {approx 1-inch thick}, trimmed
- 1 cup chopped onion, OR 1/2 packet dry onion soup
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons dijon mustard
- 3/4 tablespoons salt
- 1/2 teaspoon pepper
- 1/2 teaspoon dried dill seasoning
- 1 {8 ounce} ounce package white mushrooms, sliced
- 3 garlic cloves, minced
- 1/3 cup all-purpose flour
- 1 cup beef broth
- 1 {8 ounce} container lite sour cream
- 2 cups egg noodles, cooked {4 ounces, uncooked}
1. cut steak into cubes. place in a slow cooker on high heat. add onion, parsley, mustard, salt, pepper, dill, mushrooms & garlic & stir.
2. pour flour into a small mixing bowl & slowly add broth, whisking until blended. add to slow cooker. cover & cook for 8 hours on low.
3. when cooked, stir in sour cream & serve over noodles!
Made this tonight - big hit with the hubby! I doubled the recipe to make it fit better in my crockpot. It will make some great lunches this week. Love it!
