Brussels 'n Bacon

sigh...another brussels sprout season is coming to a close. you typically see these seasonal beauties appear on menus & in grocery stores late fall & they disappear with the onset of spring. if you have ever lived with me, worked with me, birthed have smelled the glory of the baby cabbage counterpart.

i love brussels sprouts & am sharing an easy, delicious recipe to convert even the pickiest of sprout snobs! try this side dish before they disappear from the produce section.


Ingredients {in order of use}
*serves 2
  • 10-15 brussels sprouts, washed
  • 3 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon fresh ground pepper
  • 2 cloves garlic, roughly chopped
  • 3 strips turkey bacon, cooked crispy & crumbled
1. steam* brussels sprouts until tender on the inside {test with a fork}.
*steam by micro-waving in a bowl covered with plastic wrap with an inch of water, with a stove top steam basket or with a veggie steamer.

2. when tender, remove from steaming, let cool & cut in half, length-wise.

3. heat olive oil in a medium skillet over medium heat. toss sprouts in & season with salt & pepper. sauté for 6-8 minutes or until sprouts start to brown. toss in garlic, bacon & sauté for 5 additional minutes.

  2. I prepared brussel sprouts last night! Wish I had seen this recipe before.. yum! I, too, am sad to see them slip from store shelves. Until next year, you little green gems...
