shout out to al pal...my friend who also shares a love of meatballs! she found a recipe similar to this one when we lived in new york and we immediately fell in love. i love making these and having them to snack on during the week...a quick bite packed with protein! check out the serving options below...great for dinner or as an appetizer!
Ingredients
- 1 1/4 pound ground turkey
- 1 egg {or 1/4 cup egg whites}
- 1/4 cup pine nuts
- 1/4 cup currants {next to the raisins}
- 1/4 teaspoon cinnamon
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1/2 teaspoon salt
- 1/2 teaspoon fresh, ground pepper
1. heat broiler.
2. in a large mixing bowl, mix all ingredients {use a mashed potato masher to ensure even mix!}
3. form approx. 20 walnut-sized meatballs & place on a foil-lined baking sheet. broil approx. 5 minutes {or until brown}. flip meatballs & broil again on other side for approx. 3 minutes.
2 serving options:
1. as dinner over garlic wilted spinach with crusty french bread!
2. as an appetizer with grape jelly & spicy mustard as dipping sauces!
